Pay 'n' Spray is back in GTA 6. It repairs your car, resprays it to shake off police Heat, registers stolen cars as yours and buys ordinary stolen cars. After you sell one car there, that shop won't take another for a while.

Using Pay 'n' Spray to lose the police
Police search using what witnesses reported: your clothes, your appearance, your weapons and your car. Stepping out of the car removes it from the description, but the other details still match.
